-Neapolitan Pizza Recipe-
Ingredients:
For the dough:
2 cups all-purpose flour
1 tsp. salt
1 tsp. olive oil
1 package active dry yeast
Dissolve yeast in 1/2 cup plus 1 tbsp. lukewarm water.
For the topping:
2 to 3 tbsp. olive oil
6 oz. Parmesan cheese, grated
1 (8 oz.) can tomato sauce or marinara sauce
small tin fillet anchovies
sliced sweet italian sausage or thin strips prosciutto ham
6 oz. mozzarella cheese, cut into 1/4 inch slices
1/4 tsp. dried sweet basil
freshly ground pepper to taste
Instructions:
To make dough, place flour and salt on board. Add dissolved yeast. Knead thorougly,
add oil, continue kneading until smooth. Cover. Set in warm place about 3
hours, or until dough doubles in bulk.
Flatten, roll out dough into 10-inch disk, about 1/4-inch thick. Spread sauce
over dough. Sprinkle with Parmasan cheese. Scatter sausage, anchovies, salami,
etc over pizza. Top with mozzarella. Sprinkle with basil and pepper.
Bake at 425 degrees.
